Use case was that the system would run too hot, otherwise. The chassis
in question is designed as such that the only place for a single 2.5"
drive is above the network ports, which while passively cooled are the
hottest part of the board. That, and power usage in general.
I ended up installing root on a large, fast USB3 drive, and putting /opt
and /var on eMMC.
I'd still quite like to work out why Grub2 doesn't support SD or eMMC,
but it's not such an issue.
